Sparkling wines made in Trentino


We talk about TRENTODOC, the classic method to make the original sparkling wine coming from the mountains.
Yes, that's the truth, because the vineyards grow along the sides of gorgeous mountains. Here the temperature of the day is quite different from the temperature of the night and this wide gap enables the grapes to get acidity and magic smells.
The grapes are Chardonnay and Pinot Nero, in other words two of the best grapes to be processed to become sparkling wine.
TRENTODOC bottles are 8millions of bottles every year and the trend is to increase the quantity.
The founder of TRENTODOC was Giulio Ferrari.
Coming back from a trip in the French region Champagne, he understood that the altitude of his region could be the best environment to plant the grapes chardonnay and pinot nero. And now we can say that he saw far and was right !
The sparkling wines officialy allowed to be TRENTODOC are sixty.
We cannot describe each one of these sixty bottles and therefore we focus only on one bottle whose appealing was strong and delightful to us.
Really we enjoyed very much the ROTARI RISERVA FLAVIO 2002 TRENTODOC.


This sparkling wine is made using exclusively Chardonnay grapes in traditional method with the fermentation in the bottle.
The grapes are hand-picked, softly pressed and left to macerate for 48 hours at cold temperature. Then there is the addition of selected yeasts and the fermentation begins, 40% of it in not new oak barrels.
After this first alcoholic fermentation the wine lies on the lees for 5 months; then there is the meeting between the oak part and the steel part, when yeasts and sugar are added. Then the wine is bottled and the second alcoholic fermentation occurs in the bottle.
The long ageing in the bottle begins and go on for 60 months.
It is really a masterpiece.
The color is straw yellow with gold reflections.
The flavour gives us mature fruit and white chocolate.
The perlage is fine and very persistent.
In our opinion the best match is with very fresh fish, even to taste not cooked and with first course with mushrooms, also.
